the thursday hustle

Thursday is my super busy day. From start to exhausted plop into bed.







Typical morning rush. Coffee. Trevy meds. Kiss the hubs good bye. Make sure the kids are dressed...fed...brushed...and ready to spend the day with Grams. That will be a post of it's own soon enough...how much Grams helps out & makes much of what I do possible. But not today. Today is about my Thursday Hustle.









Trevy MUST lay down for a nap at 9am...with the goal of at least an hour rest. He has school in the afternoon...and if he misses his nap...it's pointless to make the 30 minute trek.







While he's laying down I squeeze in a work out. Read and respond to as many emails as possible in 10 minutes or less. Shower. Make a valiant attempt at looking mommy cute...without drying or primping my hair at all. No time for frills people. Cause I've gotta run to the kitchen and make Trevy lunch-to-go. Usually a yogurt shake and pretzels. Or crackers. Or whatever I can safely (I freak out about choking hazards) manipulate from my driver seat finger tips to his three point harnessed mitt behind me...while mad dashing the 30 minute drive to Groden. But first I have to make sure the diaper bag is stocked. And yet somehow I'm always short something. Diaper. Extra clothes. Tylenol Jr. Thank God for other...much more together...mommy friends!







I spend the morning running around like a crazy chicken. And feeling like I'm forgetting something.







What is it?







It's right there...on the tip of my mind...







Ugh...







Tap...tap...tap...







It'll come...







Oh shoot...that's it!







We need to eat! Dinner!







And it has to be something super easy. And quick. Cause we only have two clicks to rush in and gobble before we're back out the door to soccer practice. And then the big kids go straight from soccer to Kid's Club at Grams & Pop Pop's church. But I can't send them to church hungry! So I must make dinner!



Which brings me to the whole point of this post. If you've stuck with me this far...it'll be fork lickin' worth the wait.



See...today I crock potted the most delish steak ever! So good I had to share! You know...in case you have a Thursday Hustle in your life too! So without further lolly gagging...I give you...

Succulent Steak


1 1/2 lbs. round steak (I cut mine into bite sized chunks...for easy peasy eating)
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/2 cup low sodium beef broth
2 teaspoons Worcestershire sauce



1. Mix together 1/4 cup flour, salt, pepper and paprika
2. Dredge meat in seasoned flour until lightly coated
3. Layer steak in the crock pot
4. Combine beef broth and Worcestershire sauce. Pour over mixture in crock pot
5. Cover and cook on low 8-10 hours
6. Serve over cooked egg noodles

When I tell you it was yuuuuum-o...I mean it! And the best part is how easy it was! I'm all about the easy.

Thanks for the dinner tip! I'm always in need and am in absolute love with my crockpot. Have you every checked out 365 days of crockpotting...or something like that. If you google that you'll find her blog...Stephanie with the unhealthy crockpot obsession.

Our "in a hurry" standby is Ginger Chicken...

boneless skinless chicken breasts, however many you think you'll need, frozen
1 can diced tomatoes (I like the small cut ones with peppers, etc)
1 tsp ground ginger
2 tbsp minute tapioca
1 tsp garlic powder
1 tsp parsley flakes
1 tbsp brown sugar, packed
cayenne pepper, to taste
1/2 tsp salt (or to taste)

Throw chicken into smallish slow cooker, mix remaining ingredients and poor on to. Cook on low 7-8 hours, or high for about 3 or 4. Take chicken breasts out and shred before serving (return to crock). Serve over rice or noodles.
